Gluten Food: Chocolate covered rice chex

If you don't know but Chex has a lot of gluten free cereal options. I actually got this recipe a long time ago from a co-worker and this was a great snack. But now in case I loose it-it is on the blog. Everything is gluten free and it is enjoyed by all!

1 package semi-sweet chocolate chips
1/4 cup peanut butter
6 cups of Chex (I used the regular rice chex but you can pick any you wish).
1 cup of powdered sugar

First melt the chocolate on high for 1 minute. Stir, heat an additional 30 seconds to make sure all is melted. Make sure you don't overheat!!!

Add peanut butter. Some people add peanuts but I didn't feel like it. This will help the chocolate from solidifying.

Next add your Chex- mix to coat it all.

In a separate bag add your 1 cup of powdered sugar. Add in your chocolate covered Chex, seal bag, and shake, mix, etc to coat them all. They will separate from each other. Your bag will look gross but its OK!

Here they are done! They are so Yummy! And a great fix if you are in need of chocolate. Best of all it can be eaten by all gluten free people. Yay!

xoxoxo,
Lauren
