I miss a good home made mac-n-cheese. I have been looking for a good recipe when I came across this one in the Deliciously G-Free cookbook.
So I cooked the pasta elbow macaroni but 3 minutes less than the box says. I used an entire box.
Now let's make the sauce- it will all be from scratch.
3 c milk
1 tsp potato starch
1/2 tsp salt
2 tbp butter
2 tbp cream cheese
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp black pepper
3 cups cheddar cheese
Whisk milk, potato starch, and salt in bowl. In a stock pot melt butter and cream cheese. Slowly whisk in the milk mixture. Add spices. Reduce to low heat and add cheese. Cook for about 3 minutes. Add cooked pasta to sauce and transfer to a baking dish. Cook for 10 minutes at 400 degrees. Serve!
Love!!! Just love!!! The spices really add some dimension to the mix, much more grownup than something out a box. It makes a lot so it took me some time to eat up, but I was happy to eat it. :)

Black Forest Smoothie
This is from the Deliciously G- Free book. Black Forrest Shake.
Ingredients:
1 c frozen cherries
1.5 c skim milk
1/2 ripe avocado, pitted and peeled
1 tbs cocoa powder
1 tbs light brown sugar
4 ice cubes
You could not taste the avocado for real. It totally had the black forest cake taste which was impressive. The only issue was the blending of the cocoa powder. It tended to clump and you would get the clumps in the smoothie, I may have a blender that stinks, which is possible, Until it breaks or we get married and we can add it to a wedding registry we are stuck with this one.
I would recommend- I was stuffed for a long time with this smoothie.

quinoa fail
I am a little bit of catch up because well I sliced part of thumb off and I'm in salvage mode. Its rough. I can't do much and I have to take it easy, Its a boring story but it stems from cooking. Not this recipe but something else.
In lieu of my fail, here is a quinoa fail. LOL At least I can type some..
This recipe is from the Deliciously G- Free, the quinoa salad. I wont even go through the recipe b/c it was awful. It had mint in it which in the end the entire salad tasted like toothpaste. So we called it the toothpaste salad and threw it away. Neither of us could stomach it.
DO NOT RECOMMEND!!! Fail!
Blah! Happy Sunday, 1 more day to see if my finger makes it. Nervous....

Tropical breeze smoothie
On a smoothie kick. Found this recipe in the Deliciously G-Free book. It is called tropical breeze smoothie.
Pretty simple: coconut water, flax seed meal, bananas, lime juice, lime zest, pineapple. Blend.
yeah it made a lot and I was full!
